I've had jersey sheets before, a set from West Elm. IF THE QUALITY OF THE COTTON IS DECENT, they should be softer and stretchier than cotton percale. I liked my jersey sheets; unfortunately, my Jack Russell clawed up the fitted sheet burrowing. I still use the rest of the set, because jersey is warmer than percale, and is a nice alternative to flannel, which I can't stand. I find flannel to be heavy to have a tendency to pill, regardless of the quality. I use the West Elm jersey top sheet as a light blanket in the summer! Summary: good jersey sheets are soft and warm and will last a long time unless you have a set of claws in your house :)
So, given my experience and stringent requirements, I can assure you that these Ink plus Ivy sheets are a great value for the money. I got a twin pair for my my sons-one gray and one blue-both soft heather-type colors. I may get a set (full) in natural for myself! They will keep me warm and soft in a nice cocoon during the endless gray, wet and chill of a Seattle winter.
